Muffins with Spinach and Poached Eggs

Serves 2

Ingredients

4 large eggs
4 English muffins
4 tbsp butter
8 oz spinach
¼ tsp salt
¼ tsp coarse ground black pepper
4 tbsp hollandaise sauce

Method

  1. Poach the eggs in boiling water or in the microwave using a poaching tray.
  2. Meanwhile, cut the muffins in half and toast them a toaster until golden brown.
  3. Heat 3 tbsp butter in a saucepan and cook the spinach for a couple of minutes, until wilted.
  4. Season lightly with coarse ground black pepper.
  5. Butter the muffins with the remaining butter and serve topped with the spinach, egg and hollandaise sauce.
  6. Serve.
