Ingredients
4 large eggs
4 English muffins
4 tbsp butter
8 oz
spinach
¼ tsp salt
¼ tsp coarse ground black pepper
4 tbsp hollandaise sauce
Method
- Poach the eggs in boiling water or in the microwave using a poaching tray.
- Meanwhile, cut the muffins in half and toast them a toaster until golden
brown.
- Heat 3 tbsp butter in a saucepan and cook the spinach for a couple of
minutes, until wilted.
- Season lightly with coarse ground black pepper.
- Butter the muffins with the remaining butter and serve topped with the spinach, egg and hollandaise
sauce.
- Serve.
