Total cooking and preparation time approximately 10 minutes

Serves 2

Ingredients

2 lb fresh mussels
1 small or ½ onion, finely chopped
¼ pint white wine
1 tbsp dried parsley
½ tsp coarse ground black pepper
4 tbsp double cream

Method

  1. Clean the mussels and discard any that do not close when tapped.
  2. Heat the wine in a large saucepan on a medium heat.
  3. Add the onion and fry for about 3 minutes until the onion has softened.
  4. Add the wine, parsley, mussel and pepper.
  5. Cover and cook for about 5 minutes until the mussels have opened.
  6. Remove and place into two bowls, discarding any that have not opened.
  7. Add the cream to the saucepan. Stir and cook for about a minutes, until heated through.
  8. Pour the sauce over the top of the mussels and serve with crusty bread.
