Ingredients
2 lb fresh mussels
1 small or ½ onion, finely chopped
¼ pint white wine
1 tbsp dried parsley
½ tsp coarse ground black pepper
4 tbsp double cream
Method
- Clean the mussels and discard any that do not close when tapped.
- Heat the wine in a large saucepan on a medium heat.
- Add the onion and fry for about 3 minutes until the
onion has softened.
- Add the wine, parsley, mussel and pepper.
- Cover and cook for about 5 minutes until the
mussels have
opened.
- Remove and place into two bowls, discarding any that have not opened.
- Add the cream to the saucepan. Stir and cook for about a minutes, until
heated through.
- Pour the sauce over the top of the mussels and serve with crusty
bread.
