Pesto Sardines on Toasted Ciabatta

Serves 1

Ingredients

1 ciabatta roll
2 tbsp green pesto
5 oz tin sardines in oil, drained
½ cup grated cheddar

Method

  1. Preheat the grill to the highest setting.
  2. Cut the ciabatta in half lengthways.
  3. Spread each ciabatta half with pesto, top with sardines, then sprinkle with cheese.
  4. Grill for about 3 minutes, until the cheese has melted.
  5. Serve.
