Ingredients

2 tbsp olive oil
3 eggs
1 tbsp double cream
¼ tsp salt
¼ tsp ground white pepper
1 tbsp dried basil
1 tbsp tomato purée
3 tbsp parmesan cheese
8-10 slices pepperoni

Method

  1. Preheat the grill to the highest setting.
  2. Heat the oil in a frying pan on medium-high.
  3. Beat the eggs with the cream, salt, pepper and basil.
  4. Pour the egg mixture into the frying pan, ensuring that it is evenly spread, then cook for about 3 minutes, until set underneath.
  5. Spoon the tomato purée on top of the frittata and spread out evenly.
  6. Sprinkle on the parmesan then top with the pepperoni.
  7. Grill for about 3 minutes until golden and set.
  8. Cut into quarters and serve with lettuce, tomato and red onion salad.
