Ingredients
2 tbsp olive oil
3 eggs
1 tbsp double cream
¼ tsp salt
¼ tsp ground white pepper
1 tbsp dried basil
1 tbsp tomato purée
3 tbsp parmesan cheese
8-10 slices pepperoni
Method
- Preheat the grill to the highest setting.
- Heat the oil in a frying pan on medium-high.
- Beat the eggs with the cream, salt, pepper and basil.
- Pour the egg mixture into the frying pan, ensuring that it is evenly spread,
then cook for about 3 minutes, until set underneath.
- Spoon the tomato purée on top of the frittata and spread out evenly.
- Sprinkle on the parmesan then top with the pepperoni.
- Grill for about 3 minutes
until golden and set.
- Cut into quarters and serve with lettuce,
tomato and red onion salad.
