Ingredients
2 x 12 oz tins new potatoes
½ lb garlic sausage
For the dressing:
1 tsp Dijon mustard
1 tbsp white wine vinegar
3 tbsp extra virgin olive oil
1 tbsp dried parsley
½ tsp salt
½ tsp coarse ground black pepper
Method
- Mix the dressing ingredients together in a cup or mug and set aside.
- Drain the potatoes and cut them in half lengthways.
- Slice the sausage.
- Put the sausage, potatoes and dressing in a large bowl and toss until well
combined.
- Serve with crusty bread.
