Total cooking and preparation time approximately 5 minutes

Serves 2

Ingredients

2 x 12 oz tins new potatoes
½ lb garlic sausage

For the dressing:
1 tsp Dijon mustard
1 tbsp white wine vinegar
3 tbsp extra virgin olive oil
1 tbsp dried parsley
½ tsp salt
½ tsp coarse ground black pepper

Method

  1. Mix the dressing ingredients together in a cup or mug and set aside.
  2. Drain the potatoes and cut them in half lengthways.
  3. Slice the sausage.
  4. Put the sausage, potatoes and dressing in a large bowl and toss until well combined.
  5. Serve with crusty bread.
