Ingredients

¼ lb large prawns, cooked and peeled
1 tbsp tomato ketchup
3 tbsp mayonnaise
4 slices wholemeal bread
1 tbsp butter
1 punnet salad cress

Method

  1. Place the prawns, ketchup and mayonnaise in a bowl and toss until well mixed.
  2. Butter each slice of bread.
  3. Top two slices of bread with the cress and then prawn mixture.
  4. Finish by topping with the remaining slices of bread.
  5. Cut the sandwiches in half diagonally and serve with good quality potato crisps.
