Serves 4

Ingredients

8 flour tortillas
½ lb white cheddar, grated
8 small fresh chillies, thinly sliced
12 oz tin sweetcorn, drained
½ lb thick sliced ham

Method

  1. Preheat a frying pan on a high heat without oil.
  2. Place one tortilla flat in the pan.
  3. Top half the tortilla with grated cheese, leaving a half inch gap at the edge to allow for seepage.
  4. Add one chopped chilli and two tablespoons of sweetcorn.
  5. Top with a slice of ham and add another layer of cheese.
  6. Using a spatula, fold the empty half of the tortilla over the top of the filled half and press down slightly to seal.
  7. Flip the tortilla over using the spatula and cook for about another minutes.
  8. Repeat for each of the other seven tortillas, then serve.

 Alternative fillings:

  • Chicken - Replace the ham with roast chicken
  • Prawn - Replace the ham with cooked prawns
  • Guacamole - Replace the ham with guacamole (you may want to leave out the chillies because guacamole is already quite spicy)
