Ingredients
8 flour tortillas
½ lb white cheddar, grated
8 small fresh chillies, thinly sliced
12 oz tin sweetcorn, drained
½ lb thick sliced ham
Method
- Preheat a frying pan on a high heat without oil.
- Place one tortilla flat in the pan.
- Top half the tortilla with grated cheese, leaving a half inch gap at
the edge to allow for seepage.
- Add one chopped chilli and two tablespoons of sweetcorn.
- Top with a slice of ham and add another layer of cheese.
- Using a spatula, fold the empty half of the tortilla over the top of the
filled half and press down slightly to seal.
- Flip the tortilla over using the spatula and cook for about another
minutes.
- Repeat for each of the other seven tortillas, then serve.
Alternative fillings:
- Chicken - Replace the ham with roast chicken
- Prawn - Replace the ham with cooked prawns
- Guacamole - Replace the ham with guacamole (you may want to leave
out the chillies because guacamole is already quite spicy)
