Ingredients
4 eggs
1 pinch of salt
1 pinch of ground white pepper
2 tbsp milk
1 tbsp olive oil
2 large or 4 small spring onions, chopped
4 oz prawns, cooked and peeled
2 tbsp dried parsley
Method
- Lightly beat the eggs in a small jug with the salt, pepper, milk and
parsley.
- Heat the oil in a frying pan on a medium-high heat and fry the onions for
about 1-2 minutes until slightly softened.
- Add the prawns and fry for about another 30 seconds.
- Add the egg mixture and scramble lightly for about 2 minutes until set but
still soft.
- Serve with crusty bread.
