Ingredients
2 English muffins
4 eggs, beaten
pinch of salt
pinch of ground white pepper
1 tbsp butter
¼ lb smoked salmon off-cuts in bite-sized pieces
Method
- Toast the muffins in a toaster until golden brown.
- Put the eggs in a bowl and microwave on full power for 20 seconds then
beat with a fork. Repeat until cooked and scrambled, then season with salt
and pepper.
- Butter the muffins, top with the scrambled egg, then arrange the salmon on
top.
- Serve.
