Spinach with Raisins and Pinenuts

Total cooking and preparation time approximately 5 minutes

Serves 4

Ingredients

2 tbsp olive oil
¼ cup pinenuts
2 x 8 oz packets baby spinach
4 cloves garlic, crushed
½ cup raisins
½ cup croutons
½ tsp salt
½ tsp coarse ground black pepper

Method

  1. Heat the oil in a large frying pan on high and fry the pinenuts for about 2 minutes, until slightly browned, then set aside.
  2. Lower the heat slightly, add the spinach and garlic, and fry for about another 2 minutes, stirring continuously, until the spinach has wilted.
  3. Return the pinenuts to the pan, add the raisins, croutons, salt and pepper and cook for about another minutes, until heated through.
  4. Serve with toasted garlic pittas.
