Ingredients
2 tbsp olive oil
¼ cup pinenuts
2 x 8 oz packets baby spinach
4 cloves garlic, crushed
½ cup raisins
½ cup croutons
½ tsp salt
½ tsp coarse ground black pepper
Method
- Heat the oil in a large frying pan on high and fry the pinenuts for about
2 minutes, until slightly browned, then set aside.
- Lower the heat slightly, add the spinach and garlic, and fry for about
another 2 minutes, stirring continuously, until the spinach has wilted.
- Return the pinenuts to the pan, add the raisins, croutons, salt and pepper
and cook for about another minutes, until heated through.
- Serve with toasted garlic pittas.
