Serves 4

Ingredients

1 large baguette
4 tbsp crème fraiche
4 tbsp refried beans
1 lb roast pork or chicken
½ lb white cheddar, grated
4 fresh tomatoes, sliced
2 tbsp fresh coriander
4 fresh small chillies, finely chopped
1 tbsp lime juice

Method

  1. Cut the baguette in half lengthways.
  2. Spread the top half of the baguette with some crème fraiche and the bottom with some refried beans.
  3. Arrange the pork on top of the beans, followed by the cheese, tomato, coriander and chillies.
  4. Sprinkle with lime juice then replace the top half of the baguette and press down slightly.
  5. Cut into four equal-sized pieces and serve with spicy tortilla chips.
