Ingredients
1 large baguette
4 tbsp crème fraiche
4 tbsp refried beans
1 lb roast pork or chicken
½ lb white cheddar, grated
4 fresh tomatoes, sliced
2 tbsp fresh coriander
4 fresh small chillies, finely chopped
1 tbsp lime juice
Method
- Cut the baguette in half lengthways.
- Spread the top half of the baguette with some crème fraiche and the bottom
with some refried beans.
- Arrange the pork on top of the beans, followed by the cheese,
tomato, coriander and chillies.
- Sprinkle with lime juice then replace the top half of the baguette and press down slightly.
- Cut into four equal-sized pieces and serve with spicy tortilla chips.
