Ingredients
4 rashers unsmoked back bacon
4 tbsp butter
1 tbsp plain flour
3 tbsp milk
3 tbsp ale or beer
½ tsp English mustard
½ tsp Worcestershire sauce
2 thick slices of crusty bread
Method
- Preheat the grill to the highest setting and grill the bacon for about 5
minutes each side, until cooked but not crispy.
- Meanwhile, toast the bread in a toaster until golden brown.
- While the toast and bacon are cooking, melt 3 tbsp butter in a saucepan on
a moderate heat.
- Add the flour and stir until a smooth paste is formed.
- Stir in the milk, ale, mustard and Worcestershire sauce.
- Add the cheese to the pan and stir until it melts, then remove from the
heat and cover to keep warm.
- When the bread is toasted, butter and put onto the plates.
- Top with the bacon, then spoon the sauce over the top and serve.
