Total cooking and preparation time approximately 10 minutes

Serves 2

Ingredients

4 rashers unsmoked back bacon
4 tbsp butter
1 tbsp plain flour
3 tbsp milk
3 tbsp ale or beer
½ tsp English mustard
½ tsp Worcestershire sauce
2 thick slices of crusty bread

Method

  1. Preheat the grill to the highest setting and grill the bacon for about 5 minutes each side, until cooked but not crispy.
  2. Meanwhile, toast the bread in a toaster until golden brown.
  3. While the toast and bacon are cooking, melt 3 tbsp butter in a saucepan on a moderate heat.
  4. Add the flour and stir until a smooth paste is formed.
  5. Stir in the milk, ale, mustard and Worcestershire sauce.
  6. Add the cheese to the pan and stir until it melts, then remove from the heat and cover to keep warm.
  7. When the bread is toasted, butter and put onto the plates.
  8. Top with the bacon, then spoon the sauce over the top and serve.
