Total cooking and preparation time approximately 10 minutes

Ingredients
8 oz tuna steak in brine
4 x 4½ oz tins sardines in oil
8 slices Serrano or prosciutto ham
8 oz white cheddar
4 cups mixed lettuce leaves
32 thin slices chorizo sausage
2 roasted red peppers, cut into bite-sized pieces
20 approx. pitted green olives
8 oz jar asparagus
For the dressing:
2 tsp balsamic vinegar
2 tbsp olive oil
1 tsp English mustard
½ tsp salt
½ tsp coarse ground black pepper
Method
- Mix the dressing ingredients together in a bowl and set aside.
- Drain the tuna and sardines.
- Roll the ham up into tubes.
- Cut the cheese into bite-sized chunks
- Dip the lettuce leaves in the dressing, drain and arrange on one half of
each plate.
- Arrange the remaining ingredients on the other side of each plate.
- Serve with crusty bread.
