Ingredients

1 large baking potato
2 tbsp butter
Topping

Method

  1. Preheat oven to 200oC / gas mark 6.
  2. Prick the potato all over with a fork.
  3. Bake in the oven for about an hour, until soft and fluffy on the inside.
  4. Cut the potato in half, put half the butter onto each half and allow it to melt.
  5. Add your favourite topping.
  6. Serve with lettuce, tomato and red onion salad.

  • Red salmon with lemon and black pepper, topped with crème fraiche and chives
  • Baked beans and mini sausages
  • Grated cheddar and coleslaw
  • Cottage cheese and spring onions
  • Ham and grated cheddar
  • Prawns in seafood sauce
  • Tuna, mayonnaise and sweetcorn
  • Tinned Bolognese sauce
  • Tinned chilli con carne
  • Tinned meatballs in tomato sauce
  • Tinned chicken tikka masala
  • Tinned coronation chicken
