Ingredients
2 cups penne pasta
1 tbsp olive oil
8 oz chorizo sausage
1 green pepper, chopped
4 large or 8 small spring onions, chopped
¼ pint crème fraiche
2 tsp wholegrain mustard
Method
- Cook the pasta in a saucepan of boiling water according to the
instructions on the packet until al dente.
- Meanwhile, heat the oil in a frying pan on medium-high and fry the chorizo
for about 5 minutes until browned.
- Add the pepper and spring onions to the frying pan and fry for another 3
minutes.
- Stir in the crème fraiche and mustard, cook for about another 2 minutes
until heated through, then remove from the heat.
- When the pasta is cooked, drain, return to the pan and stir in the chorizo
sauce.
- Serve with crusty ciabatta.
