Total cooking and preparation time approximately 15 minutes

Serves 2

Ingredients

2 cups penne pasta
1 tbsp olive oil
8 oz chorizo sausage
1 green pepper, chopped
4 large or 8 small spring onions, chopped
¼ pint crème fraiche
2 tsp wholegrain mustard

Method

  1. Cook the pasta in a saucepan of boiling water according to the instructions on the packet until al dente.
  2. Meanwhile, heat the oil in a frying pan on medium-high and fry the chorizo for about 5 minutes until browned.
  3. Add the pepper and spring onions to the frying pan and fry for another 3 minutes.
  4. Stir in the crème fraiche and mustard, cook for about another 2 minutes until heated through, then remove from the heat.
  5. When the pasta is cooked, drain, return to the pan and stir in the chorizo sauce.
  6. Serve with crusty ciabatta.
