Egg and Bacon with Fried Bread

Total cooking and preparation time approximately 10 minutes

Serves 2

Ingredients

4 rashers bacon
4 tbsp approx. sunflower or vegetable oil
1 medium slice white bread

2 eggs

Method

  1. Preheat the grill to the highest setting and grill the bacon for about 10 minutes, turning halfway through.
  2. Meanwhile, pour enough of the oil as necessary into the frying pan to cover the bottom.
  3. Heat the oil on a moderate setting then fry the bread for about 3 minutes each side, until golden brown.
  4. Cut the bread in half diagonally and transfer to the serving plates.
  5. Add a little more oil to the pan if necessary, fry the eggs for about 3 minutes with the lid on the pan, until the yolks are almost set, then place on top of the fried bread.
  6. When the bacon is cooked transfer it to the plates and serve with the egg and fried bread.
