Ingredients
4 rashers bacon
4 tbsp approx. sunflower or vegetable oil
1 medium slice white bread
2 eggs
Method
- Preheat the grill to the highest setting and grill the bacon for about 10
minutes, turning halfway through.
- Meanwhile, pour enough of the oil as necessary into the frying pan to
cover the bottom.
- Heat the oil on a moderate setting then fry the bread for about 3 minutes
each side, until golden brown.
- Cut the bread in half diagonally and transfer to the serving plates.
- Add a little more oil to the pan if necessary, fry the eggs for about 3
minutes with the lid on the pan, until the yolks are almost set, then place on
top of the fried bread.
- When the bacon is cooked transfer it to the plates and serve with the egg
and fried bread.
