Gammon with Parsley Sauce

Total cooking and preparation time approximately 1 hour 40 minutes

Serves 2

Ingredients

1 lb gammon joint
2 tbsp butter
2 tbsp plain flour
½ pint full-cream milk
2 tbsp dried parsley
1 tsp salt
½ ground white pepper

Method

  1. Fill a large saucepan, big enough to hold the gammon, with water and bring to the boil.
  2. Add the gammon and and cook for about an hour and a half, or until the gammon is pink an succulent.
  3. About ten minutes before the gammon is done, melt the butter in a saucepan on a medium-high heat.
  4. Add the flour and stir until well mixed.
  5. Add the milk, parsley, salt and pepper, and continue to heat, stirring constantly, until thickened.
  6. Drain the gammon, slice, divided between the plates and spoon some of the sauce over the top.
  7. Serve with peas, carrots and baby new potatoes.
