Ingredients
½ tbsp olive oil
8 oz bacon ladons
1 lb gnocchi
2 tbsp butter
6 oz spinach
4 oz sun-dried tomatoes, chopped
8 oz mascarpone cheese
½ tsp nutmeg
2 oz grated parmesan cheese
Method
- Preheat the grill to the highest setting.
- Cook the gnocchi in a large saucepan of lightly salted water for about 3
minutes, until tender.
- Meanwhile, heat the oil in a frying pan an fry the bacon for about 5
minutes, stirring occasionally.
- Add the butter and stir until melted, then add the spinach and stir until
it wilts.
- When the gnocchi is cooked, drain and transfer to a heatproof dish, large
enough so that the gnocchi comfortably fits into it in one layer.
- Drain any excess fat from the spinach and bacon mixture, then sprinkle the
spinach and bacon randomly over the gnocchi.
- Break the mascarpone into smallish chunks and scatter those onto the
gnocchi as well, then do the same with the tomatoes.
- Finally, sprinkle on the nutmeg and parmesan, and place under the grill
for about 5 minutes, until the cheese has melted.
- Serve with crusty bread.
