Gnocchi with Spinach & Bacon

Serves 2

Ingredients

½ tbsp olive oil
8 oz bacon ladons
1 lb gnocchi
2 tbsp butter
6 oz spinach
4 oz sun-dried tomatoes, chopped
8 oz mascarpone cheese
½ tsp nutmeg
2 oz grated parmesan cheese

Method

  1. Preheat the grill to the highest setting.
  2. Cook the gnocchi in a large saucepan of lightly salted water for about 3 minutes, until tender.
  3. Meanwhile, heat the oil in a frying pan an fry the bacon for about 5 minutes, stirring occasionally.
  4. Add the butter and stir until melted, then add the spinach and stir until it wilts.
  5. When the gnocchi is cooked, drain and transfer to a heatproof dish, large enough so that the gnocchi comfortably fits into it in one layer.
  6. Drain any excess fat from the spinach and bacon mixture, then sprinkle the spinach and bacon randomly over the gnocchi.
  7. Break the mascarpone into smallish chunks and scatter those onto the gnocchi as well, then do the same with the tomatoes.
  8. Finally, sprinkle on the nutmeg and parmesan, and place under the grill for about 5 minutes, until the cheese has melted.
  9. Serve with crusty bread.
