Serves 1

Ingredients

2 tbsp butter
3 medium eggs
1 tsp parmesan cheese
1 tsp dried tarragon
1 tsp salt
1 tsp ground white pepper
2 tbsp water
2 slices thick-cut ham, chopped
3 button mushrooms, sliced

Method

  1. Heat the butter in a frying pan on a medium-high heat until bubbling.
  2. Meanwhile, beat the eggs with the parmesan, tarragon, salt, pepper and water. Add the ham and mushrooms and stir well.
  3. Pour the eggs mixture into the frying pan and cook for about 15 seconds until it begins to set.
  4. Scrape the part-set egg mixture to the sides of the pan and shake the pan gently to allow the unset egg to take it's place.
  5. Allow to cook for another 15 seconds then repeat step 4.
  6. Cook for about another minute. The omelette should be set underneath but still slightly soft on top.
  7. Slide the omelette out onto a serving plate and fold in half.
  8. Serve with lettuce, tomato and red onion salad.
