Total cooking and preparation time approximately 20 minutes

Serves 2

Ingredients

4 large leeks, trimmed
2 tbsp butter
2 tbsp plain flour
½ pint milk
4 oz medium white cheddar, grated
1 tsp ground nutmeg
¼ tsp salt
¼ tsp coarse ground black pepper
4 tbsp mature red cheddar, grated
8 slices good quality thick sliced ham

Method

  1. Preheat the grill to the highest setting.
  2. Cook the leeks, whole, in boiling salted water for about 10 minutes until tender but not soft.
  3. Meanwhile, melt the butter in a saucepan.
  4. Add the flour and mix well, then slowly stir in the milk.
  5. Continue stirring until the sauce has thickened, then add the white cheddar, nutmeg, salt and pepper. Stir until the cheese melts.
  6. Wrap 2 slices of ham around each leek and place in a shallow baking tray.    
  7. Pour the cheese sauce over the top and sprinkle with the grated red cheddar. Place under the grill for about 3 minutes until the cheese has melted.
  8. Serve with lettuce, tomato and red onion salad.
