Ingredients
4 large leeks, trimmed
2 tbsp butter
2 tbsp plain flour
½ pint milk
4 oz medium white cheddar, grated
1 tsp ground nutmeg
¼ tsp salt
¼ tsp coarse ground black pepper
4 tbsp mature red cheddar, grated
8 slices good quality thick sliced ham
Method
- Preheat the grill to the highest setting.
- Cook the leeks, whole, in boiling salted water for about 10 minutes until
tender but not soft.
- Meanwhile, melt the butter in a saucepan.
- Add the flour and mix well, then
slowly stir in the milk.
- Continue stirring until the sauce has thickened, then add the white cheddar,
nutmeg, salt and pepper. Stir until the cheese melts.
- Wrap 2 slices of ham around each leek and place in a shallow baking tray.
- Pour the cheese sauce over the top and sprinkle with the grated red cheddar.
Place under the grill for about 3 minutes until the cheese has melted.
- Serve with lettuce,
tomato and red onion salad.
