Total cooking and preparation time approximately 20 minutes

Serves 4

Ingredients

1 lb minced pork
2 egg whites
1 large or ½ small onion, finely chopped
2 golden delicious apples, cored, peeled and finely chopped
½ cup breadcrumbs
2 tbsp cornflour
1 tbsp dried parsley
1 tbsp dried sage
1 tsp salt
½ tsp nutmeg
½ tsp coarse ground black pepper
½ tsp cayenne pepper
2 tbsp olive oil

Method

  1. Preheat the grill to the highest setting.
  2. Combine all the ingredients except the olive oil together in a large bowl.
  3. Shape the mixture together into two inch diameter balls and press firmly in the hands to compress.
  4. Press down on each patty with the palm of the hand to flatten into a disk.
  5. Brush the patties all over with olive oil and grill for about 5 minutes on each side.
  6. Serve with green beans and chilli and spring onion mash.
