Ingredients

2 tbsp lemon juice
1 tbsp olive oil
1 tbsp dried thyme
1 clove garlic, crushed
¼ tsp salt
¼ tsp coarse ground black pepper
4 pork loin chops
1 courgette, sliced
2 tbsp green pesto

Method

  1. Pre-heat the grill to the highest setting.
  2. Put the lemon juice, olive oil, thyme, garlic, salt, pepper in a cup or small jug and stir until well mixed.
  3. Put the pork chops and courgette slices in a shallow baking dish, pour in the mixture from the cup, toss until the chops are well coated, then leave to marinate for about 10 minutes.
  4. Grill the pork chops for about 5 minutes, then turn over, add the courgette slices to the grill pan and grill for about another 5 minutes.
  5. Serve the pork with the courgette slices and plain rice.
