Ingredients
2 tbsp lemon juice
1 tbsp olive oil
1 tbsp dried thyme
1 clove garlic, crushed
¼ tsp salt
¼ tsp coarse ground black pepper
4 pork loin chops
1 courgette, sliced
2 tbsp green pesto
Method
- Pre-heat the grill to the highest setting.
- Put the lemon juice, olive oil, thyme, garlic, salt, pepper in a cup or
small jug and stir until well mixed.
- Put the pork chops and courgette slices in a shallow baking dish, pour in
the mixture from the cup, toss until the chops are well coated, then leave to
marinate for about 10 minutes.
- Grill the pork chops for about 5 minutes, then turn over, add the
courgette slices to the grill pan and grill for about another 5 minutes.
- Serve the pork with the courgette slices and plain rice.
