Ingredients
1 tbsp sunflower or vegetable oil
1 lb minced pork
1 tbsp garlic, crushed
1 tbsp dried oregano
1 tsp ground cinnamon
½ tsp ground cloves
1 tbsp dry sherry
1 tsp salt
½ tsp coarse ground black pepper
4 flour tortillas
1 cup grated cheddar
For the sauce:
14 oz tin chopped tomatoes
½ pint soured cream
1 tbsp dried coriander leaf
1 tsp garlic powder
2 tsp chilli powder
Method
- Preheat the oven to 180oC / gas mark 4.
- Heat the oil in a frying pan on a medium heat and fry the pork for about 5
minutes until browned.
- Mix the sauce ingredients together in a large jug and set aside.
- Add the crushed garlic, oregano, cinnamon, cloves, sherry, caster sugar,
salt and black pepper to the frying pan. Stir well.
- Arrange the tortillas in an ovenproof dish just large enough to hold them
comfortably when rolled up.
- Divide the pork mixture between the tortillas then roll them up with the
pork inside.
- Pour the sauce over the top and sprinkle on the cheese.
- Cook in the oven for 25 minutes.
- Serve with Caesar salad.
