Ingredients

1 tbsp sunflower or vegetable oil
1 lb minced pork
1 tbsp garlic, crushed
1 tbsp dried oregano
1 tsp ground cinnamon
½ tsp ground cloves
1 tbsp dry sherry
1 tsp salt
½ tsp coarse ground black pepper
4 flour tortillas
1 cup grated cheddar

For the sauce:
14 oz tin chopped tomatoes
½ pint soured cream
1 tbsp dried coriander leaf
1 tsp garlic powder
2 tsp chilli powder

Method

  1. Preheat the oven to 180oC / gas mark 4.
  2. Heat the oil in a frying pan on a medium heat and fry the pork for about 5 minutes until browned.
  3. Mix the sauce ingredients together in a large jug and set aside.
  4. Add the crushed garlic, oregano, cinnamon, cloves, sherry, caster sugar, salt and black pepper to the frying pan. Stir well.
  5. Arrange the tortillas in an ovenproof dish just large enough to hold them comfortably when rolled up.
  6. Divide the pork mixture between the tortillas then roll them up with the pork inside.
  7. Pour the sauce over the top and sprinkle on the cheese.
  8. Cook in the oven for 25 minutes.
  9. Serve with Caesar salad.
