Pork with Tomato and Apple Sauce

Total cooking and preparation time approximately 30 minutes

Serves 2

Ingredients

4 small pork chops
2 tbsp butter
2 tbsp olive oil
1 large or 2 small onions, peeled and sliced

For the sauce:
¼ pint cider
¼ pint apple juice
1 tbsp tomato purée
1 tsp clear honey
2 tsp Dijon mustard
½ tsp salt
½ tsp coarse ground black pepper
1 tbsp cornflour

Method

  1. Preheat the grill on its highest setting and grill the pork chops for about 7-8 minutes each side until golden brown.
  2. Meanwhile, add the butter and oil to a frying pan on a medium heat and fry the onions and mushrooms for about 5 minutes, until softened.
  3. Mix the sauce ingredients together in a jug until all the cornflour has dissolved, pour into the frying pan, then simmer for about 5 minutes until thickened slightly.
  4. Serve the pork chops with the sauce poured over the top, with garden peas and baby new potatoes.
