Prosciutto Pork with Mushroom Sauce

Serves 2

Ingredients

1 pork fillet
3 tbsp olive oil
½ tsp salt
½ tsp coarse ground black pepper
2 tsp dried sage
4 large slice prosciutto
4 cocktail sticks
1 tbsp lemon juice

For the sauce:
1 small or ½ large onion, chopped
4 oz mushrooms, sliced
2 tbsp dry sherry
1 tbsp tomato purée
2 tsp dried parsley
½ tsp salt
½ tsp coarse ground black pepper

Method

  1. Preheat the oven to 190oC / gas mark 5.
  2. Brush the pork fillet all over with a little of the olive oil, then sprinkle with sage, salt and pepper.
  3. Wrap the prosciutto around the pork, secure with cocktail sticks.
  4. Sprinkle with lemon juice, place in a tray and cook in the oven for about 25 minutes until cooked all the way through.
  5. About 10 minutes before the pork is ready, heat the remaining olive oil in a frying pan on medium heat and fry the onion and mushrooms for about 5 minutes until softened.
  6. Add the remaining sauce ingredients, stir, and cook for about another 2 minutes until heated through.
  7. Slice the pork and serve with the mushroom sauce and saffron rice.
