Ingredients
1 pork fillet
3 tbsp olive oil
½ tsp salt
½ tsp coarse ground black pepper
1 tsp dried thyme
4 rashers rindless streaky bacon
4 cocktail sticks
For the sauce:
1 small or ½ large onion, chopped
4 oz mushrooms, sliced
1 tbsp dry sherry
2 tsp wholegrain mustard
¼ pint crème fraiche
½ tsp salt
½ tsp coarse ground black pepper
Method
- Preheat the oven to 190oC / gas mark 5.
- Brush the pork fillet all over with a little of the olive oil, then
sprinkle with thyme, salt and pepper.
- Wrap the bacon around the pork, secure with cocktail sticks.
- Place in a tray and cook in the oven for about 25 minutes until cooked all
the way through.
- About 10 minutes before the pork is ready, heat the remaining olive oil in
a frying pan on medium heat and fry the onion and mushrooms for about 5
minutes until softened.
- Add the remaining sauce ingredients, stir, and cook for about another 2
minutes until heated through.
- Slice the pork and serve on top of the sauce, with steamed broccoli and
baby new potatoes.
