Total cooking and preparation time approximately 30 minutes

Serves 2

Ingredients

1 pork fillet
3 tbsp olive oil
½ tsp salt
½ tsp coarse ground black pepper
1 tsp dried thyme
4 rashers rindless streaky bacon
4 cocktail sticks

For the sauce:
1 small or ½ large onion, chopped
4 oz mushrooms, sliced
1 tbsp dry sherry
2 tsp wholegrain mustard
¼ pint crème fraiche
½ tsp salt
½ tsp coarse ground black pepper

Method

  1. Preheat the oven to 190oC / gas mark 5.
  2. Brush the pork fillet all over with a little of the olive oil, then sprinkle with thyme, salt and pepper.
  3. Wrap the bacon around the pork, secure with cocktail sticks.
  4. Place in a tray and cook in the oven for about 25 minutes until cooked all the way through.
  5. About 10 minutes before the pork is ready, heat the remaining olive oil in a frying pan on medium heat and fry the onion and mushrooms for about 5 minutes until softened.
  6. Add the remaining sauce ingredients, stir, and cook for about another 2 minutes until heated through.
  7. Slice the pork and serve on top of the sauce, with steamed broccoli and baby new potatoes.
