Rigatoni with Spicy Sausage

Total cooking and preparation time approximately 20 minutes

Serves 4

Ingredients

4 cups dried rigatoni or penne pasta
2 tbsp olive oil
1 lb good quality spicy sausages
1 large or 2 small onions, sliced
2 tsp garlic, crushed
2 x 14 oz tins chopped tomatoes
16 green olives, halved
¼ pint dry white wine
1 tbsp dried oregano
1 tbsp dried parsley
½ tsp salt
½ tsp coarse ground black pepper
6 oz buffalo mozzarella cheese, cut into chunks

Method

  1. Cook the pasta in a large saucepan according to the instructions on the packet.
  2. Meanwhile, heat the oil in a large saucepan and fry the sausages for about 10 minutes until browned, then set aside.
  3. Add the onion and garlic to the pan and fry for about another 5 minutes until softened and starting to brown.
  4. Slice the sausages and return to the pan. Add the tomatoes, olives, wine, oregano, parsley, salt and pepper. Stir well to mix.
  5. Add the mozzarella and stir again.
  6. When the pasta is cooked, drain, add the sauce and toss well to combine.
  7. Serve with crusty bread.
