Ingredients
4 cups dried rigatoni or penne pasta
2 tbsp olive oil
1 lb good quality spicy sausages
1 large or 2 small onions, sliced
2 tsp garlic, crushed
2 x 14 oz tins chopped tomatoes
16 green olives, halved
¼ pint dry white wine
1 tbsp dried oregano
1 tbsp dried parsley
½ tsp salt
½ tsp coarse ground black pepper
6 oz buffalo mozzarella cheese, cut into chunks
Method
- Cook the pasta in a large saucepan according to the instructions on the
packet.
- Meanwhile, heat the oil in a large saucepan and fry the sausages for about
10 minutes
until browned, then set aside.
- Add the onion and garlic to the pan and fry for about another 5 minutes until
softened and starting to brown.
- Slice the sausages and return to the pan. Add the tomatoes, olives, wine,
oregano, parsley, salt and pepper. Stir well to mix.
- Add the mozzarella and stir again.
- When the pasta is cooked, drain, add the sauce and toss well to combine.
- Serve with crusty bread.
