Roast Pork with Apple Sauce

Total cooking and preparation time approximately 1 hour 50 minutes

Serves 4

Ingredients

3 lb pork loin
2 tbsp sunflower or vegetable oil
1 tsp salt
2 tbsp plain flour
2 tbsp water
4 tbsp apple sauce

Method

  1. Preheat the oven to 220oC gas mark 7.
  2. Put the pork in a roasting pan, rub all over with the oil and sprinkle on the salt.
  3. Place in the oven and cook for about 30 minutes.
  4. Turn the oven down to 190oC / gas mark 5, cook for about another 1 hour 10 minutes, then set aside to rest.
  5. Cut the crackling off the pork and set aside for later use, then carve the pork and divide between four plates.
  6. Top with the apple sauce and serve with stuffing made from a packet, roast parsnips, carrots, cabbage, mashed potato and the Bisto gravy.
