Serves 2

Ingredients

1 tbsp olive oil
½ lb button mushrooms, halved
6 rashers smoked streaky bacon, cut into strips
2 x 14 oz tin macaroni cheese
1 tbsp lemon juice
1 tsp paprika
2 tbsp dried parsley
2 tbsp grated parmesan

Method

  1. Heat the oil in a frying pan and fry the mushrooms and bacon for about 5 minutes until the bacon is cooked but not crispy.
  2. Stir in the macaroni cheese, lemon, paprika and parsley.
  3. Cook for about another 3 minutes until heated through.
  4. Serve with the parmesan sprinkled on top, with crusty bread.
