Serves 2

Ingredients

3 eggs
3 tbsp grated parmesan
1 tbsp dried parsley
¼ pint single cream
2 tsp garlic granules
½ tsp salt
½ tsp coarse ground black pepper
8 oz dried spaghetti
2 tbsp olive oil
1 large or 2 small onions, finely chopped
½ lb pancetta or streaky bacon, finely chopped

Method

  1. In a jug, beat the eggs with the parmesan, parsley, cream, garlic, salt and pepper, then set aside.
  2. Cook the pasta in a saucepan of boiling water according to the instructions on the packet, until al dente.
  3. Meanwhile, heat the oil in a large frying pan and fry the onion gently for about 5 minutes until softened.
  4. Add the pancetta and cook for about another 5 minutes.
  5. Drain the pasta and return to the pan.
  6. Add the pancetta mixture and the egg mixture. Cook for about 2 minutes, stirring continuously.
  7. Serve with crusty bread.
