Ingredients
2 tbsp olive oil
4 large or 8 small spring onions, chopped
1 chorizo sausage, sliced
11 oz tin new potatoes, drained and halved lengthways
1 fresh red chilli, chopped
3 eggs
1 tbsp double cream
½ tsp salt
½ tsp ground white pepper
1 oz parmesan cheese
Method
- Preheat the grill to the highest setting.
- Heat the oil in a frying pan on a moderate heat and fry the onion, chorizo,
potatoes and chilli for
about 3-4 minutes, stirring occasionally.
- Meanwhile, beat the eggs with the cream, salt and pepper.
- Pour the egg mixture into the frying pan ensuring that it is evenly spread,
then cook for another 3-4 minutes.
- Sprinkle the parmesan over the frittata and grill for about 3-4 minutes
until golden and set.
- Cut into quarters and serve with cherry tomato halves and toasted foccacia
bread.
