Total cooking and preparation time approximately 15 minutes

Serves 1

Ingredients

2 tbsp olive oil
4 large or 8 small spring onions, chopped
1 chorizo sausage, sliced
11 oz tin new potatoes, drained and halved lengthways
1 fresh red chilli, chopped
3 eggs
1 tbsp double cream
½ tsp salt
½ tsp ground white pepper
1 oz parmesan cheese

Method

  1. Preheat the grill to the highest setting.
  2. Heat the oil in a frying pan on a moderate heat and fry the onion, chorizo, potatoes and chilli for about 3-4 minutes, stirring occasionally.
  3. Meanwhile, beat the eggs with the cream, salt and pepper.
  4. Pour the egg mixture into the frying pan ensuring that it is evenly spread, then cook for another 3-4 minutes.
  5. Sprinkle the parmesan over the frittata and grill for about 3-4 minutes until golden and set.
  6. Cut into quarters and serve with cherry tomato halves and toasted foccacia bread.
