Ingredients
1 tbsp olive oil
¾ lb pork, cut into stir-fry strips
1 small or ½ large onion, halved and sliced
½ green pepper, deseeded and chopped
1 clove garlic, crushed
1½ cups penne pasta
1 red chilli, finely chopped
1 tsp ground cumin
½ pint passata
½ pint chicken stock
14 oz tin cannellini beans
1 tbsp dried parsley
Method
- Heat the olive oil in a large frying pan on a high heat and stir-fry the
pork and onions until the onion has softened and no pink remains on the pork.
- Add the pepper and garlic and stir-fry for about another 2 minutes.
- Stir in all the remaining ingredients until well mixed, lower the heat to
medium and bring to the boil.
- Cover and continue to cook for about another 15 minutes until the pasta is
al dente.
- Serve with garlic bread.
