Total cooking and preparation time approximately 30 minutes

Serves 2

Ingredients

1 tbsp olive oil
¾ lb pork, cut into stir-fry strips
1 small or ½ large onion, halved and sliced
½ green pepper, deseeded and chopped
1 clove garlic, crushed
1½ cups penne pasta
1 red chilli, finely chopped
1 tsp ground cumin
½ pint passata
½ pint chicken stock
14 oz tin cannellini beans
1 tbsp dried parsley

Method

  1. Heat the olive oil in a large frying pan on a high heat and stir-fry the pork and onions until the onion has softened and no pink remains on the pork.
  2. Add the pepper and garlic and stir-fry for about another 2 minutes.
  3. Stir in all the remaining ingredients until well mixed, lower the heat to medium and bring to the boil.
  4. Cover and continue to cook for about another 15 minutes until the pasta is al dente.
  5. Serve with garlic bread.
