Total cooking and preparation time approximately 1 hour, plus marinating time

Serves 4

Ingredients

12 lb pork spare ribs
4 tbsp clear honey
1 tbsp Worcestershire sauce
1 tsp five spice powder
3 tbsp dark soy sauce
2 tbsp dry sherry
1 tsp hot chilli sauce
2 cloves garlic, crushed
1½ tbsp tomato purée
1 tsp English mustard

Method

  1. Put the spare ribs into a tray big enough to hold them in a single layer and set aside.
  2. Put the remaining ingredients into a microwave proof bowl, stir, microwave for 30 seconds on full power, then stir again.
  3. Pour the sauce over the ribs and toss until well coated, then leave in the fridge to marinate overnight.
  4. Preheat the oven to 200oC / Gas mark 6.
  5. Transfer the ribs to a shallow baking tray just large enough to hold them in a single layer standing on their sides.
  6. Pour over any remaining marinade, then cook in the oven for about 40 minutes, until browned.
  7. Serve with corn on the cob and sautéed potatoes.
