Total cooking and preparation time approximately 35 minutes

Serves 4

Ingredients

2 medium eggs
1 cup plain flour
½ cup milk
½ cup water
¼ tsp salt
1 lb Cumberland sausages
1 tbsp sunflower or vegetable oil

Method

  1. Preheat oven to 220oC / gas mark 7.
  2. Put the eggs, flour, milk, water and salt into a mixing bowl and whisk into a batter.
  3. Arrange the sausage neatly in a baking tray, place on the top shelf of the oven and cook for about 10 minutes, until the sausages start to colour.
  4. Remove the baking tray from the oven and pour the batter around the sausages.
  5. Return to the oven and cook for a further 20-25 minutes, until the batter has risen and the sausages have browned.
  6. Serve with leeks, carrots, mashed potatoes and onion gravy.
