Total cooking and preparation time approximately 20 minutes

Serves 2

Ingredients

2 cups penne pasta
2 tbsp olive oil
2 chicken breast fillets, diced
1 small or ½ large onion, chopped
3 small chillies, finely chopped
1 green pepper, chopped
14 oz tin chopped tomatoes
1 tbsp dried basil
2 tbsp dry white wine
¼ tsp salt
¼ tsp coarse ground black pepper

Method

  1. Cook the pasta according to the instructions on the packet.
  2. Meanwhile, heat the oil in a very hot wok or large frying pan and stir-fry the chicken for about 3 minutes, until it begins to brown.
  3. Add the onion and stir-fry for another 5 minutes, until softened.
  4. Add the green pepper and chillies and stir-fry for another 2 minutes.
  5. Add the tomatoes, basil, wine, salt and black pepper. Reduce the heat to medium and simmer for about another 5 minutes.
  6. Serve the pasta with the sauce spooned over the top with crusty bread.
