Ingredients
3 tbsp olive oil
1 lb chicken breast, diced
1 large or 2 small onions, halved and sliced
1 red pepper, diced
1 green pepper, diced
8 flour tortillas
16 tbsp hot tomato salsa
For the spice mix:
1 tbsp ground cumin
1 tbsp ground coriander
1 tsp chilli powder
1 tsp onion granules
1 tsp white sugar
½ tsp salt
½ tsp ground black pepper
Method
- Heat the oil in a very hot wok and stir-fry the chicken and onion for
about 3 minutes, until the chicken turns white.
- Add the pepper and the spice mix and stir-fry for about another 3 minutes.
- Heat the tortillas in the microwave for about 30 seconds.
- Divide the chicken mixture between the tortillas, top with salsa, and roll
up into fajitas.
- Serve with yellow rice.
