Serves 2

Ingredients

3 tbsp olive oil
1 lb chicken breast, diced
1 large or 2 small onions, halved and sliced
1 red pepper, diced
1 green pepper, diced
8 flour tortillas
16 tbsp hot tomato salsa

For the spice mix:
1 tbsp ground cumin
1 tbsp ground coriander
1 tsp chilli powder
1 tsp onion granules
1 tsp white sugar
½ tsp salt
½ tsp ground black pepper

Method

  1. Heat the oil in a very hot wok and stir-fry the chicken and onion for about 3 minutes, until the chicken turns white.
  2. Add the pepper and the spice mix and stir-fry for about another 3 minutes.
  3. Heat the tortillas in the microwave for about 30 seconds.
  4. Divide the chicken mixture between the tortillas, top with salsa, and roll up into fajitas.
  5. Serve with yellow rice.
