Total cooking and preparation time approximately 25 minutes

Serves 4

Ingredients

14 oz tin chopped tomatoes
2 tbsp tomato purée
2 tbsp water
2 tbsp dried basil
4 large chicken breast fillets
2 tsp salt
2 tsp coarse ground black pepper
2 fresh tomatoes, sliced

Method

  1. Preheat oven to 190oC / gas mark 5.
  2. Press down firmly on the chicken breasts with the palm of your hand until they are about half the original thickness.
  3. In a jug, mix together the chopped tomatoes, tomato purée, water and 1 tbsp basil.
  4. Place the chicken fillets in a baking tray, cover evenly with the sauce and season with salt and pepper.
  5. Slice the tomatoes into 6 slices each. Arrange 3 slices on top of each chicken breast and sprinkle with the rest of the basil.
  6. Cook in the oven for about 20 minutes.
  7. Serve with plain rice.
