Total cooking and preparation time approximately 15 minutes

Serves 4

Ingredients

2 tbsp olive oil
4 boneless chicken breast fillets
¼ pint chicken stock
14 oz tin chopped tomatoes
1 tsp chilli powder
3 tsp garlic granules
4 oz ground almonds
1 tsp ground cumin
1 tbsp dried coriander leaf
1 tsp salt
1 large or 2 small onions, chopped
1 green pepper, chopped

Method

  1. Press down firmly on the chicken breasts with the palm of your hand until they are about half the original thickness.
  2. Heat the oil in a large frying pan over a medium heat and fry the chicken for about 5 minutes.
  3. Meanwhile, in a large jug, mix together the chicken stock, tomatoes, chilli powder, garlic, almonds, cumin, coriander and salt.
  4. Add the pepper and onion to the frying pan then pour over the sauce.
  5. Bring to the boil and simmer for about 5 minutes until the chicken is cooked through.
  6. Serve with plain rice.
