Ingredients
2 tbsp olive oil
4 boneless chicken breast fillets
¼ pint chicken stock
14 oz tin chopped tomatoes
1 tsp chilli powder
3 tsp garlic granules
4 oz ground almonds
1 tsp ground cumin
1 tbsp dried coriander leaf
1 tsp salt
1 large or 2 small onions, chopped
1 green pepper, chopped
Method
- Press down firmly on the chicken breasts with the palm of your hand until
they are about half the original thickness.
- Heat the oil in a large frying pan over a medium heat and fry the chicken
for about 5 minutes.
- Meanwhile, in a large jug, mix together the chicken stock, tomatoes,
chilli powder, garlic, almonds, cumin, coriander and salt.
- Add the pepper and onion to the frying pan then pour over the sauce.
- Bring to the boil and simmer for about 5 minutes until the chicken is
cooked through.
- Serve with plain rice.
