Serves 4

Ingredients

2 tbsp olive oil
4 boneless chicken breast fillets
1 large red pepper
1 large yellow pepper
1 tbsp garlic, crushed
1 tsp dried mixed herbs
14 oz tin chopped tomatoes
1 tsp salt
1 tsp coarse ground black pepper

Method

  1. Press down firmly on the chicken breasts with the palm of your hand until they are about half the original thickness.
  2. Heat the oil in a large frying pan to medium-high and fry the chicken breasts for about 5 minutes each side until starting to brown.
  3. Add the pepper, garlic, herbs, tomatoes salt and black pepper.
  4. Bring to the boil then cook for about 10 minutes without a lid.
  5. Serve with fusilli pasta.
