Ingredients
2 tbsp olive oil
4 boneless chicken breast fillets
1 large red pepper
1 large yellow pepper
1 tbsp garlic, crushed
1 tsp dried mixed herbs
14 oz tin chopped tomatoes
1 tsp salt
1 tsp coarse ground black pepper
Method
- Press down firmly on the chicken breasts with the palm of your hand until
they are about half the original thickness.
- Heat the oil in a large frying pan to medium-high and fry the chicken breasts for about
5
minutes each side until starting to brown.
- Add the pepper, garlic, herbs, tomatoes salt and black pepper.
- Bring to the boil then cook for about 10 minutes without a lid.
- Serve with fusilli pasta.
