Serves 4

Ingredients

2 tbsp vegetable oil
4 chicken breast fillets
1 small or ½ large onion, halved and sliced
2 tsp garlic, crushed
2 tsp ginger, finely chopped

For the sauce:
½ pint single cream
2 tsp ground coriander
2 tsp curry powder
½ tsp cumin
½ tsp turmeric
½ tsp chilli powder
1 tbsp dried coriander leaves
1 tbsp flaked almonds
2 tsp garam masala
1 tsp white sugar
½ tsp salt

Method

  1. Press down firmly on the chicken breasts with the palm of your hand until they are about half the original thickness.
  2. Heat the oil in a very hot frying pan, until it starts to smoke, and fry the chicken, onions, garlic and ginger for about 5 minutes until the chicken has browned and the onions have softened.
  3. Mix the sauce ingredients together in a jug or bowl, add to the frying pan and toss the chicken until well coated.
  4. Cook for about another 5 minutes until the chicken is cooked all the way through.
  5. Serve with basmati rice and poppadums.
