Serves 4

Ingredients

4 chicken breast fillets
½ pint passata
2 tbsp dry white wine
2 tbsp dried basil
2 tsp salt
2 tsp coarse ground black pepper
4 tbsp grated parmesan
8 oz buffalo mozzarella, sliced

Method

  1. Preheat oven to 190oC / gas mark 5.
  2. In a jug, mix together the passata, wine, basil, salt and pepper.
  3. Place the chicken fillets in a baking tray and cover evenly with the sauce.
  4. Sprinkle the parmesan over the top, then lay the mozzarella on top of that and cook in the oven for about 20 minutes.
  5. Serve with herby tagliatelle.
