Ingredients
4 chicken breast fillets
½ pint passata
2 tbsp dry white wine
2 tbsp dried basil
2 tsp salt
2 tsp coarse ground black pepper
4 tbsp grated parmesan
8 oz buffalo mozzarella, sliced
Method
- Preheat oven to 190oC / gas mark 5.
- In a jug, mix together the passata, wine, basil, salt and pepper.
- Place the chicken fillets in a baking tray and cover evenly with the sauce.
- Sprinkle the parmesan over the top, then lay the mozzarella on top of that and cook in the oven for about 20 minutes.
- Serve with herby tagliatelle.
