Serves 4

Ingredients

4 chicken breast fillets
8 tbsp cream cheese
1 tsp coarse ground black pepper
8 slices pancetta
4 cocktail sticks

Method

  1. Preheat oven to 200oC/gas mark 6.
  2. Cut a slit into each chicken breast and stuff with cream cheese. Secure with the cocktail sticks so that the cheese does not leak out.
  3. Sprinkle the top of each breast with pepper, then wrap with the pancetta.
  4. Place the chicken breasts in a shallow baking tray and cook in the oven for about 25 minutes, until the juices run clear when pricked with a fork.
  5. Remove the cocktail sticks and serve with herby tagliatelle.
