Ingredients
4 chicken breast fillets
8 tbsp cream cheese
1 tsp coarse ground black pepper
8 slices pancetta
4 cocktail sticks
Method
- Preheat oven to 200oC/gas mark 6.
- Cut a slit into each chicken breast and stuff with cream cheese. Secure with the
cocktail sticks so that the cheese does not leak out.
- Sprinkle the top of each breast with pepper, then wrap with the pancetta.
- Place the chicken breasts in a shallow baking tray and cook in the oven
for about 25 minutes, until the juices run clear when pricked with a fork.
- Remove the cocktail sticks and serve with
herby tagliatelle.
