Total cooking and preparation time approximately 15 minutes

Serves 2

Ingredients

1 tbsp vegetable oil
2 chicken breast fillets, diced
1 small or ½ large onion, halved and sliced
1 tbsp garlic, crushed
1 green pepper, chopped
½ pint chicken stock
1 tsp cayenne pepper
½ tsp ground ginger
½ tsp chilli powder
½ tsp salt
½ tsp coarse ground black pepper
2 tbsp cornflour
2 tbsp water

Method

  1. Heat the oil in a very wok and stir-fry the chicken, onion and garlic for about 5 minutes until the chicken has turned white and the onion has softened.
  2. Add the green pepper and stir-fry for about another 2 minutes.
  3. Add the stock, cayenne pepper, ginger, chilli and black pepper.
  4. Combine the cornflour and water in a cup or jug and then stir into the pan.
  5. Bring to the boil and simmer for about 5 minutes to reduce slightly.
  6. Serve with plain rice and prawn crackers.
