Ingredients
4 chicken legs
1 tsp salt
1 tsp coarse black pepper
11 oz tin cannellini beans, drained
8 oz cherry tomatoes
1 garlic bulb, broken into cloves and peeled
2 fresh red chillies, thinly sliced
1 tbsp dried basil
3 tbsp olive oil
Method
- Preheat the oven to 180oC / gas mark 4.
- Put the chicken legs into a baking dish and season with salt and pepper.
- Throw the cannellini beans, tomatoes, garlic, chillies and basil into the
gaps between the chicken and drizzle over the olive oil.
- Cook in the oven for 1½ hours.
- Serve with baby new potatoes.
