Total cooking and preparation time approximately 1 hour 40 minutes

Serves 2

Ingredients

4 chicken legs
1 tsp salt
1 tsp coarse black pepper
11 oz tin cannellini beans, drained
8 oz cherry tomatoes
1 garlic bulb, broken into cloves and peeled
2 fresh red chillies, thinly sliced
1 tbsp dried basil
3 tbsp olive oil

Method

  1. Preheat the oven to 180oC / gas mark 4.
  2. Put the chicken legs into a baking dish and season with salt and pepper.
  3. Throw the cannellini beans, tomatoes, garlic, chillies and basil into the gaps between the chicken and drizzle over the olive oil.
  4. Cook in the oven for 1½ hours.
  5. Serve with baby new potatoes.
