Total cooking and preparation time approximately 15 minutes

Serves 2

Ingredients

2 skinless chicken breast fillets
2 tbsp olive oil
1 tbsp lemon juice
2 tsp garlic, crushed
1 tbsp dried thyme
1 tsp salt
1tsp coarse ground black pepper
4 little gem lettuces, chopped
1 small or ½ large red onion, halved and sliced
3 tbsp Caesar salad dressing
2 tbsp grated cow's mozzarella
½ avocado, chopped
¼ cup croutons

Method

  1. Preheat the grill to the highest setting.
  2. Place the chicken breasts, olive oil, lemon juice, garlic, thyme, salt and pepper in a bowl and toss to mix well.
  3. Grill for about 12 minutes, turning halfway through, until no pink remains.
  4. Meanwhile, put the lettuce, onion, salad dressing, mozzarella, avocado and croutons into another bowl.
  5. When the chicken is ready, add to the bowl with the lettuce and other ingredients, and toss to mix well.
  6. Serve with crusty bread.
