Ingredients
2 skinless chicken breast fillets
2 tbsp olive oil
1 tbsp lemon juice
2 tsp garlic, crushed
1 tbsp dried thyme
1 tsp salt
1tsp coarse ground black pepper
4 little gem lettuces, chopped
1 small or ½ large red onion, halved and sliced
3 tbsp Caesar salad dressing
2 tbsp grated cow's mozzarella
½ avocado, chopped
¼ cup croutons
Method
- Preheat the grill to the highest setting.
- Place the chicken breasts, olive oil, lemon juice, garlic, thyme, salt and
pepper in a bowl and toss to mix well.
- Grill for about 12 minutes, turning halfway through, until no pink
remains.
- Meanwhile, put the lettuce, onion, salad dressing, mozzarella, avocado and
croutons into another bowl.
- When the chicken is ready, add to the bowl with the lettuce and other
ingredients, and toss to mix well.
- Serve with crusty bread.
