Serves 2

Ingredients

2 tbsp sunflower oil
2 chicken breast fillets, chopped
1 tsp ginger, chopped
2 fresh red chillies, sliced
2 tsp five-spice powder
2 large or 6 small spring onions, chopped
1 tsp dark soy sauce
2 tbsp clear honey
1 tbsp lemon juice
½ tsp salt
½ tsp coarse ground black pepper
1 lb precooked egg noodles
1 handful of fresh coriander leaves

Method

  1. Heat the oil in a very hot wok.
  2. Add the chicken and stir-fry for about 5 minutes, until no pink is showing.
  3. Add the ginger, chillies and five-spice powder. Stir.
  4. Add the spring onions, soy sauce, honey, lemon juice, salt and pepper. Cook for about another minute and stir again.
  5. Add the noodles and coriander. Stir a final time and cook for about another 2 minutes, until heated through.
  6. Serve with prawn crackers.
