Serves 4

Ingredients

1 tbsp lemon juice
2 tbsp olive oil
1 tbsp dried basil
1 tsp garlic, crushed
½ tsp salt
½ tsp coarse ground black pepper
2 large or 4 small spring onions
4 chicken breast fillets

Method

  1. Preheat the grill to medium-high.
  2. Press down firmly on the chicken breasts with the palm of your hand until they are about half the original thickness.
  3. Mix the lemon juice, oil, basil, garlic, salt, pepper and spring onions together in a bowl.
  4. Rub the chicken breasts with the the sauce then grill for about 5 minutes.
  5. Turn over, rub in any remaining sauce, and grill for about another 5 minutes until the juices run clear.
  6. Serve with green beans and grilled polenta slices.
