Ingredients
4 chicken breast fillets
1 tbsp lemon juice
1 tsp salt
2 tsp coarse ground black pepper
2 tbsp olive oil
2 tbsp Dijon mustard
¼ pint chicken stock
2 tbsp natural yoghurt
1 tbsp dried thyme
Method
- Marinate the chicken breast in the lemon juice, thyme, salt and pepper for
about five minutes.
- Heat the oil in a very hot frying pan and fry the chicken breasts for
about 15 minutes, turning halfway through, until no pink remains.
- Add the remaining ingredients to the pan, mix well, and cook for about
another 3 minutes, until heated through.
- Serve with lemon and herb couscous.
