Total cooking and preparation time approximately 25 minutes

Serves 4

Ingredients

4 chicken breast fillets
1 tbsp lemon juice
1 tsp salt
2 tsp coarse ground black pepper
2 tbsp olive oil
2 tbsp Dijon mustard
¼ pint chicken stock
2 tbsp natural yoghurt
1 tbsp dried thyme

Method

  1. Marinate the chicken breast in the lemon juice, thyme, salt and pepper for about five minutes.
  2. Heat the oil in a very hot frying pan and fry the chicken breasts for about 15 minutes, turning halfway through, until no pink remains.
  3. Add the remaining ingredients to the pan, mix well, and cook for about another 3 minutes, until heated through.
  4. Serve with lemon and herb couscous.
