Ingredients
4 chicken breast fillets
6 oz feta cheese, roughly sliced
8 cocktail sticks
2 tbsp olive oil
3 tbsp dried rosemary
1 tsp salt
1 tsp coarse ground black pepper
Method
- Preheat the oven to 200oC / gas mark 6.
- Cut a horizontal slit into each chicken breast fillet, stuff with feta
cheese and secure with cocktail sticks.
- Brush the top of each beast fillet with olive oil and sprinkle with
rosemary, salt and pepper.
- Cook in the oven for about 25 minutes, until no pink remains.
- Serve with chickpea
and tomato salad.
