Serves 4

Ingredients

4 chicken breast fillets
6 oz feta cheese, roughly sliced
8 cocktail  sticks
2 tbsp olive oil
3 tbsp dried rosemary
1 tsp salt
1 tsp coarse ground black pepper

Method

  1. Preheat the oven to 200oC / gas mark 6.
  2. Cut a horizontal slit into each chicken breast fillet, stuff with feta cheese and secure with cocktail sticks.
  3. Brush the top of each beast fillet with olive oil and sprinkle with rosemary, salt and pepper.
  4. Cook in the oven for about 25 minutes, until no pink remains.
  5. Serve with chickpea and tomato salad.
