Total cooking and preparation time approximately 30 minutes

Serves 4

Ingredients

4 boneless chicken fillets
¼ lb feta cheese, crumbled
8 cocktail sticks
1 tbsp olive oil
1 tsp paprika
1 tsp salt
1 tsp coarse ground black pepper

Method

  1. Preheat oven to 190oC/gas mark 5.
  2. Cut a slit into each chicken breast and stuff with cheese. Secure with the cocktail sticks so that the cheese does not leak out.
  3. Place the chicken breasts in a shallow baking tray and brush with oil.
  4. Sprinkle with paprika, salt and pepper then cook in the over for about 25 minutes, until the juices run clear when pricked with a fork.
  5. Remove the cocktail sticks and serve with tomato and herb couscous.
