Ingredients
4 boneless chicken fillets
¼ lb feta cheese, crumbled
8 cocktail sticks
1 tbsp olive oil
1 tsp paprika
1 tsp salt
1 tsp coarse ground black pepper
Method
- Preheat oven to 190oC/gas mark 5.
- Cut a slit into each chicken breast and stuff with cheese. Secure with the
cocktail sticks so that the cheese does not leak out.
- Place the chicken breasts in a shallow baking tray and brush with oil.
- Sprinkle with paprika, salt and pepper then cook in the over for about 25
minutes, until the juices run clear when pricked with a fork.
- Remove the cocktail sticks and serve with tomato and herb
couscous.
